  • 4 oz pancetta or guanciale, diced
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • Freshly ground black pepper to taste
  • Salt for boiling water

Instructions

  1. Bring a large pot of salted water to boil. Cook the pasta until al dente according to package instructions; reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, cook the diced pancetta until crispy and golden brown, about 5-7 minutes.
  3. In a bowl, whisk together the eggs and grated Parmesan until well combined. Add freshly cracked black pepper.
  4. Drain the pasta and quickly add it to the skillet with pancetta. Remove from heat and pour in the egg mixture while tossing vigorously to create a creamy sauce without scrambling the eggs.
  5. If needed, gradually stir in reserved pasta water until desired creaminess is achieved. Adjust seasoning with more pepper as necessary.
