  • 1 gallon whole milk
  • 1/4 teaspoon rennet
  • 2 teaspoons kosher salt
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons melted butter (optional)

Instructions

  1. Heat whole milk in a large pot over medium-low heat until it reaches 185°F (85°C). Stir gently.
  2. Remove from heat and add rennet and lemon juice, stirring gently. Let sit for 5-10 minutes until curds form.
  3. Cut the curds into small cubes with a knife, then return to low heat, stirring gently until they reach 105°F (40°C).
  4. Pour curds into a colander lined with cheesecloth to drain whey. Rinse briefly under cold water.
  5. Transfer drained curds to a bowl, mix in salt, and drizzle with melted butter if desired.
