  • 2 tbsp olive oil (extra virgin)
  • 3 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 2 cups fresh spinach
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Add cheese tortellini and cook according to package instructions until they float, about 3-5 minutes.
  2. In a large skillet over medium heat, heat olive oil. Add minced garlic and halved cherry tomatoes; sauté until tomatoes soften, about 3-4 minutes.
  3. Stir in fresh spinach along with salt and pepper; cook until wilted, about 2 minutes.
  4. Drain the tortellini (reserve some pasta water) and add to the skillet; toss gently to combine. If needed, add a splash of reserved pasta water.
  5. Serve hot, topped with freshly grated Parmesan.
