  • 8 oz penne or rotini pasta
  • 1 lb ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) black beans, drained and rinsed (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped

Instructions

  1. Cook pasta according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium heat, sauté onion and garlic until fragrant, about 3-4 minutes.
  3. Add ground meat to the skillet; cook until browned. Stir in taco seasoning.
  4. Mix in black beans and diced tomatoes; simmer for 5 minutes.
  5. Reduce heat to low, stir in cheddar cheese until melted. Combine with cooked pasta.
  6. Serve hot, topped with additional bell peppers or cheese if desired.
