  • 3 boneless skinless chicken breasts (about 1 lb)
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 ½ cups shredded mozzarella cheese (divided)
  • ½ cup freshly grated Parmesan cheese
  • 1 cup fresh spinach (chopped)
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C). Cook jumbo pasta shells according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium heat, add olive oil and cook chicken breasts until golden brown (about 6-7 minutes per side) or until internal temperature reaches 165°F (75°C). Shred the cooked chicken into bite-sized pieces.
  3. In a bowl, mix shredded chicken with spinach, half of the mozzarella cheese, garlic powder, salt, pepper, and Italian seasoning until well combined.
  4. In a saucepan over low heat, warm up the Alfredo sauce until silky smooth.
  5. Stuff each pasta shell with the chicken mixture and place them snugly in a baking dish. Pour Alfredo sauce over stuffed shells and sprinkle with remaining mozzarella cheese.
  6. Bake uncovered for about 25 minutes until bubbly and golden brown. Serve hot.
