  • 1.5 lbs Yukon Gold potatoes, quartered
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels; season generously with salt and pepper.
  3. Wash and quarter the potatoes; place them in a mixing bowl.
  4. In a small bowl, whisk together olive oil, garlic, rosemary, thyme, salt, and pepper.
  5. Toss the potatoes with half of the marinade until evenly coated.
  6. In a baking dish, add the chicken and surround it with the seasoned potatoes. Drizzle remaining marinade over everything.
  7. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
