  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups low-sodium chicken broth
  • 1 package (6 oz) herb-seasoned stuffing mix
  • 4 tbsp unsalted butter, melted
  • 1 tbsp fresh sage, chopped (or 1 tsp dried sage)
  • 1 medium onion, finely chopped
  • 1 cup celery, diced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a skillet, melt butter over medium heat. Sauté onions and celery until softened, about 5 minutes.
  3. Add chicken breasts to the skillet and pour in chicken broth until halfway covering the chicken. Season with salt, pepper, and sage; simmer gently.
  4. In a separate bowl, combine stuffing mix with melted butter and some broth until moist but not soggy.
  5. Layer half of the stuffing in the baking dish, place the chicken on top, then cover with remaining stuffing mixture.
  6. Cover with foil and bake for 30 minutes until chicken reaches an internal temperature of 165°F (74°C). Remove foil for an additional 10 minutes to brown.
