  • 1.5 lbs boneless chicken thighs
  • 2 cups basmati rice
  • 2 medium onions, thinly sliced
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • ½ cup fresh cilantro, chopped
  • ½ cup fresh mint leaves, chopped
  • 1 cup plain yogurt
  • Pinch of saffron threads (optional)
  • Salt to taste
  • 3 tbsp cooking oil

Instructions

  1. Marinate chicken thighs in yogurt, garlic, ginger, cumin, coriander, turmeric, salt, and half of the herbs for at least 30 minutes.
  2. In a large pot, heat oil over medium heat. Sauté sliced onions until golden brown; set half aside for garnish.
  3. Add marinated chicken to the pot with remaining onions and cook until fragrant (about 10 minutes).
  4. Rinse basmati rice under cold water until clear. Layer soaked rice over chicken mixture and add water to cover by an inch.
  5. Top with saffron (if using) and remaining herbs. Cover tightly and cook on low for 25-30 minutes until rice is fluffy.
  6. Fluff biryani gently with a fork before serving and garnish with crispy onions.
