  • 2 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 bell pepper (any color), sliced
  • 28 oz canned diced tomatoes
  • 1 cup dry red wine
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then sear until golden brown on both sides (about 5 minutes per side). Remove from skillet.
  2. In the same skillet, add diced onion and minced garlic. Sauté until softened (3-4 minutes).
  3. Add sliced bell pepper, canned tomatoes, and red wine to the skillet. Stir well.
  4. Return seared chicken to the skillet and sprinkle with oregano and basil. Simmer on low heat for 30-35 minutes until chicken is tender.
  5. Serve over pasta or rice, garnished with fresh basil if desired.
