  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 cup plain full-fat yogurt
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 cup coconut milk
  • 2 green chilies, chopped (adjust to taste)
  • 2 tbsp cooking oil or ghee
  • Fresh cilantro for garnish

Instructions

  1. Cut chicken into bite-sized pieces and marinate in yogurt, garlic, ginger, cumin, coriander, and turmeric for at least 30 minutes.
  2. Heat oil or ghee in a large pan over medium heat. Sauté onions until golden brown and translucent (about 10 minutes).
  3. Add marinated chicken along with its juices to the pan. Cook until browned on all sides (8-10 minutes).
  4. Stir in coconut milk and reduce heat to low. Simmer uncovered for 20-25 minutes until thickened.
  5. Garnish with fresh cilantro and serve hot with rice or naan.
