  • 8 oz fresh button mushrooms, sliced
  • 2 shallots, finely chopped
  • 3 garlic cloves, minced
  • 3/4 cup dry Marsala wine
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare your ingredients by chopping shallots and mincing garlic.
  2. In a large skillet over medium heat, melt butter with olive oil. Season chicken breasts with salt and pepper, then sear for 5-6 minutes on each side until golden brown. Remove from skillet.
  3. In the same pan, sauté shallots and garlic until fragrant (about 1 minute), then add sliced mushrooms and cook until tender.
  4. Deglaze the pan with Marsala wine, scraping up brown bits at the bottom, and let simmer for about 2-3 minutes.
  5. Stir in chicken broth and return chicken to the skillet; simmer for about 10 minutes or until the internal temperature of the chicken reaches 165°F.
  6. Garnish with fresh parsley before serving over rice or pasta.
