Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 fresh lemons (juiced and zested)
  • 2 tablespoons capers (drained)
  • 1 cup low-sodium chicken broth
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Prepare the Chicken: Pat chicken breasts dry with paper towels and season with salt and pepper.
  2. Dredge the Chicken: In a shallow bowl, mix flour with a pinch of salt. Lightly dredge each chicken breast in flour, shaking off excess.
  3. Sauté Until Golden Brown: Heat olive oil and butter in a large skillet over medium-high heat until sizzling. Cook chicken for about 5-6 minutes per side until golden brown.
  4. Add Sauce Ingredients: Remove chicken from skillet. In the same pan, add garlic and capers; sauté for about 30 seconds until fragrant.
  5. Create the Sauce: Pour in lemon juice and broth; scrape browned bits from the skillet. Simmer for 3-4 minutes until slightly thickened.
  6. Finish with Chicken and Herbs: Return chicken to the pan along with any juices; cook for another 2 minutes to heat through. Sprinkle with fresh parsley before serving.
