Scale
  • 1 lb boneless, skinless chicken thighs
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil

  • Tahini sauce (optional)

Instructions

  1. In a mixing bowl, whisk together garlic, cumin, coriander, paprika, salt, pepper, lemon juice, and olive oil.
  2. Add chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour or overnight.
  3. Heat a skillet over medium-high heat. Sear marinated chicken for about 6–7 minutes on each side until golden brown and cooked through.
  4. Let the chicken rest for 5 minutes before slicing it into thin strips.
  5. Warm pita bread slightly and fill with sliced chicken and your choice of fresh veggies like lettuce and tomatoes. Drizzle with tahini sauce if desired.
