  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups tortilla chips
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 can (15 oz) black beans, rinsed
  • 1 can (10 oz) diced tomatoes with green chiles
  • ¼ cup fresh cilantro, chopped
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • ½ cup sour cream (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, cook seasoned chicken for about 6-7 minutes per side until golden brown. Shred the chicken using two forks.
  3. Combine shredded chicken with black beans, diced tomatoes, cumin, chili powder, and half of the cheese.
  4. Layer half of the tortilla chips in the baking dish, followed by half of the chicken mixture and half of the remaining cheese. Repeat layers.
  5. Bake for 25-30 minutes until bubbly and golden brown. Let cool for 10 minutes before serving.
