  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 tbsp tomato paste
  • 2 tsp curry powder (adjust to taste)
  • 1 cup low-sodium vegetable broth
  • 2 cups fresh spinach (optional)
  • Salt & pepper to taste

Instructions

  1. Prep all ingredients: chop onions, mince garlic, and grate ginger.
  2. In a large pot over medium heat, warm oil and sauté onions until translucent (about 5 minutes).
  3. Add minced garlic and grated ginger; cook until fragrant (about 1 minute).
  4. Stir in chickpeas and tomato paste; cook for an additional 3 minutes.
  5. Pour in coconut milk and vegetable broth; bring to a gentle simmer.
  6. Season with salt, pepper, and curry powder; simmer on low heat for 15-20 minutes until slightly thickened.
  7. Add spinach just before serving until wilted.
