  • 2 lbs pork shoulder, cubed
  • 4 fresh Anaheim green chiles, roasted and chopped
  • 1 large sweet onion, diced
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 4 cups low-sodium chicken broth
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C) and roast the chiles until blistered (about 15 minutes).
  2. In a large pot, heat oil over medium heat. Sauté diced onions until translucent (approximately 5 minutes).
  3. Stir in minced garlic and cumin; cook until fragrant (about 1 minute).
  4. Add cubed pork shoulder; sear on all sides until browned (around 10 minutes).
  5. Add chopped roasted chiles and chicken broth; bring to a gentle simmer.
  6. Cover and cook on low heat for 1.5 to 2 hours until the pork is fork-tender.
  7. Squeeze fresh lime juice over the stew before serving.
