  • 4 boneless, skinless chicken breasts
  • 2 chipotle peppers in adobo sauce
  • 4 garlic cloves, minced
  • 3 tbsp freshly squeezed lime juice
  • 1 tsp ground cumin
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp honey
  • 2 tbsp fresh cilantro, chopped
  • Optional: Sour cream or Greek yogurt for serving

Instructions

  1. In a bowl, mix chipotle peppers, garlic, lime juice, cumin, olive oil, salt, and pepper to create the marinade.
  2. Place chicken in a resealable bag or dish and pour the marinade over it. Seal tightly and refrigerate for at least 30 minutes (or overnight).
  3. Preheat grill to medium-high heat (400°F) or oven to 375°F (190°C).
  4. Remove chicken from marinade and discard excess. Grill for about 6-7 minutes per side until internal temperature reaches 165°F (75°C), or bake for 25-30 minutes.
  5. Let chicken rest for five minutes before slicing. Mix honey with lime juice and cilantro for the sauce. Drizzle over sliced chicken before serving.
