  • 1 cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Grate the zucchini and drain excess moisture using a clean towel.
  3. In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  4. In another bowl, mix sugar and eggs until creamy. Stir in oil and vanilla.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Gently fold in the grated zucchini and optional chocolate chips.
  7. Pour batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let cool for 10 minutes before transferring to a wire rack.
