  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Pat chicken breasts dry and season both sides with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown on each side (about 5-7 minutes per side) until the internal temperature reaches 165°F (75°C). Remove from skillet and set aside.
  3. In the same skillet, add onions and sauté until translucent (about 3 minutes). Stir in garlic and mushrooms; cook until mushrooms are browned and moisture is released.
  4. Lower heat to medium, pour in chicken broth while scraping up browned bits from the skillet. Stir in heavy cream and simmer until slightly thickened.
  5. Return the chicken to the skillet, coating it in the sauce. Simmer for another 5-10 minutes to meld flavors.
  6. Garnish with chopped parsley before serving.
