  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1/2 cup sun-dried tomatoes packed in oil, chopped
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 6-7 minutes on each side until golden brown.
  3. Remove the chicken from the skillet; add minced garlic and sun-dried tomatoes to the same pan, sauté for about 1-2 minutes.
  4. Pour in heavy cream while stirring, then add grated Parmesan cheese and Italian seasoning. Simmer until slightly thickened.
  5. Add baby spinach until wilted (about 1 minute), then return the chicken to the skillet to coat in the sauce.
  6. Serve immediately with pasta or crusty bread.
