Crème brûlée is a luxurious French dessert featuring a rich custard base topped with a crackling layer of caramelized sugar. This elegant treat combines creamy vanilla flavor with a satisfying crunch, making it the perfect finish to any meal.

  • 2 cups heavy cream
  • 1/2 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract or seeds from 1 vanilla bean
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C). Arrange ramekins in a baking dish.
  2. In a saucepan, heat the heavy cream until steaming (not boiling), stirring continuously.
  3. In a bowl, whisk together egg yolks, sugar, and salt until smooth. Gradually pour in the warm cream while whisking constantly.
  4. Stir in vanilla extract or beans until well combined.
  5. Fill each ramekin with the mixture and place them in the baking dish. Add hot water to the dish halfway up the ramekins and bake for 40-45 minutes until set but slightly jiggly.
  6. Chill in the refrigerator for at least two hours before serving.
  7. Before serving, sprinkle sugar on top of each custard and caramelize using a kitchen torch or broiler until golden brown.
