  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and diced
  • 1 large egg
  • 1/4 cup ice-cold water
  • 1/2 lb ground meat (beef or chicken)
  • 1 small onion, chopped
  • 1/2 cup bell peppers, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Dough: In a large bowl, mix flour and salt. Rub in cold butter until crumbly. Add egg and ice-cold water gradually until dough forms.
  2. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Cook the Filling: Sauté onions and bell peppers in a skillet over medium heat until softened. Add ground meat, spices, salt, and pepper; cook until browned.
  4. Roll Out the Dough: On a floured surface, roll out chilled dough to about 1/8 inch thick. Cut into circles (4-5 inches in diameter).
  5. Fill and Fold Empanadas: Place a spoonful of filling on one half of each circle. Fold over and pinch edges to seal.
  6. Bake or Fry: Preheat oven to 375°F (190°C). Brush tops with egg wash if baking. Alternatively, fry in hot oil until golden brown.
