  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 cup fresh cilantro, chopped
  • 1 cup green salsa verde
  • 1 cup Mexican crema
  • 2 cups shredded cheese (Queso Blanco or Monterey Jack)
  • 8 corn or flour tortillas
  • 1 medium onion, chopped
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh lime juice
  • 1 tsp paprika (smoked or regular)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish lightly with nonstick spray.
  2. In a large pot over medium heat, warm olive oil. Sauté chopped onions and minced garlic until golden brown.
  3. Add chicken breasts, salt, and pepper to the pot; cover halfway with chicken broth and simmer for about 20-25 minutes until cooked through. Shred the chicken once done.
  4. In a separate bowl, mix green salsa verde with lime juice and crema until combined.
  5. Fill tortillas with shredded chicken, roll tightly, and place seam-side down in the baking dish.
  6. Pour remaining sauce over enchiladas and top generously with cheese.
  7. Bake for about 20 minutes until bubbly and golden brown on top.
  8. Garnish with fresh cilantro before serving.
