  • 2 tsp active dry yeast
  • ¼ cup extra virgin olive oil (plus more for drizzling)
  • 2 tsp kosher salt
  • 2 tbsp fresh rosemary (or other herbs)
  • 1 tsp coarse sea salt (for topping)

Instructions

  1. In a bowl, mix warm water and yeast; let sit for about 5 minutes until bubbly.
  2. In another bowl, combine flour and kosher salt. Create a well in the center and add the yeast mixture and half of the olive oil. Mix until combined.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm spot until doubled (about 1 hour).
  5. Preheat oven to 425°F (220°C). Punch down the dough gently, transfer to a greased baking sheet, and stretch into a rectangle.
  6. Dimple the surface with fingers, drizzle with olive oil, and sprinkle with coarse sea salt and rosemary before baking for 20-25 minutes until golden brown.
