  • 1 cup buttermilk (room temperature)
  • 1 cup unsalted butter (room temperature)
  • 1 cup sweetened coconut flakes
  • 1 cup toasted pecans (chopped)
  • 4 oz dark chocolate (melted, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round 9-inch cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time followed by vanilla extract until creamy.
  5. Gradually mix in buttermilk until smooth.
  6. Fold in the dry ingredients until just combined.
  7. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  8. For frosting, combine coconut flakes, toasted pecans, milk, sugar, egg yolks, and butter in a saucepan over medium heat; stir constantly until thickened.
  9. Once cooled, frost between layers and on top with the coconut-pecan mixture.
