  • 3/4 cup brown sugar (packed)
  • 2 large eggs (room temperature)
  • 3/4 cup unsulfured molasses
  • 1/2 cup vegetable oil
  • 1/2 cup warm water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, mix brown sugar and vegetable oil until smooth. Add eggs one at a time, beating well after each addition; then stir in molasses and warm water.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared pan and smooth out the top.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack.
