  • 1/2 cup milk (whole or almond)
  • 1/4 cup vegetable oil (or melted butter)
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 cup blueberries (fresh or frozen, floured)

Instructions

  1. 1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. 2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. 3. In another bowl, combine the milk, oil, lemon zest, and lemon juice until smooth.
  4. 4. Gently fold the floured blueberries into the wet mixture.
  5. 5. Pour the wet ingredients into the dry ones and stir until just combined (lumps are fine).
  6. 6. Fill muffin cups about two-thirds full with batter and bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  7. 7. Allow to cool for five minutes in the pan before transferring to wire racks.
