  • 8 oz fettuccine or linguine
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain, reserving some pasta water.
  2. In a skillet over medium heat, add olive oil. Season chicken with salt and pepper, then cook for about 6-7 minutes per side until golden brown and cooked through. Remove from pan and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute. Squeeze fresh lemon juice into the pan, scraping the browned bits.
  4. Stir in heavy cream and bring to a gentle simmer for about 3-4 minutes until slightly thickened. Add Parmesan cheese until melted.
  5. Toss drained pasta into the sauce, mixing well. If needed, add reserved pasta water to achieve desired consistency.
