  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup ketchup (plus extra for topping)
  • 2 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • Salt and pepper to taste
  • For the Sauce: 1/4 cup brown sugar (light)
  • 2 tbsp apple cider vinegar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté onions in olive oil until translucent (about 5 minutes). Add minced garlic in the last minute.
  3. In a large bowl, combine ground beef, sautéed onions and garlic, breadcrumbs, eggs, ketchup, Worcestershire sauce, mustard, salt, and pepper. Mix gently until just combined.
  4. Shape the mixture into a loaf pan or on parchment paper on a baking tray.
  5. In a separate bowl, whisk together brown sugar, apple cider vinegar, and extra ketchup. Spread over the meatloaf.
  6. Bake for about 1 hour or until internal temperature reaches 160°F (70°C). Let rest for 10 minutes before slicing.
