  • 4 boneless, skinless chicken breasts (about 1.5 lbs), diced
  • 1 cup chunky fresh salsa
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen sweet corn
  • 2 cups sturdy tortilla chips
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 2 tsp cumin
  • 2 tsp chili powder
  • Fresh cilantro, for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. In a bowl, mix diced chicken with cumin and chili powder until evenly coated.
  3. Heat oil in a skillet over medium heat; sauté onions and garlic for about 5 minutes until translucent.
  4. Stir in salsa, black beans, and corn; cook for another 3-4 minutes.
  5. Layer half of the chicken mixture in the baking dish followed by half of the tortilla chips and half of the cheese.
  6. Repeat layers and bake for 25-30 minutes until golden brown and bubbling.
  7. Garnish with chopped cilantro before serving.
