  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup diced bell peppers (red or yellow)
  • 1 cup salsa (chunky or smooth)
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with nonstick spray.
  2. In a large skillet over medium heat, add olive oil and sauté diced bell peppers until softened.
  3. Stir in uncooked rice and black beans; mix well for about two minutes.
  4. Add salsa and water to the skillet; bring to a gentle simmer.
  5. Layer half of the rice mixture into the baking dish, sprinkle half of the cheese on top, then add the remaining rice mixture.
  6. Cover with foil and bake for 25 minutes. Remove foil, top with remaining cheese, and bake uncovered for an additional 10–15 minutes until golden brown.
