  • 1 cup semi-sweet or dark chocolate chips
  • Green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the mint extract.
  4. In another bowl, whisk together flour and baking soda; gradually add this to the wet ingredients until just combined.
  5. Fold in chocolate chips (and food coloring if desired) until evenly distributed.
  6. Scoop rounded tablespoons of dough onto lined baking sheets about two inches apart.
  7. Bake for 10-12 minutes until edges are golden but centers remain soft. Cool on wire racks.
