  • 2 large eggs
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup shredded carrots
  • ½ cup raisins or dried cranberries
  • ½ cup chopped walnuts or pecans
  • ⅓ cup unsweetened coconut flakes

Instructions

  1. Preheat the oven to 350°F (175°C) and line muffin tins with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix eggs, vegetable oil, and vanilla until well combined.
  4. Fold the wet mixture into the dry ingredients gently, then add shredded carrots, dried fruit, nuts, and coconut until just combined.
  5. Fill each muffin tin about three-quarters full and bake for 20–25 minutes until golden brown.
  6. Allow cooling in tins for 5 minutes before transferring to wire racks.
