  • 2 medium aubergines (eggplants), sliced into 1/4-inch rounds
  • 1 lb ground beef or lamb
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups whole milk
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Prepare the eggplants by salting the slices and letting them sit for 30 minutes to draw out moisture. Rinse and pat dry.
  2. In a skillet over medium heat, sauté onions until translucent. Add garlic and ground meat; cook until browned.
  3. In another saucepan, melt butter over low heat. Whisk in flour until smooth; gradually add milk while stirring until thickened. Season with salt and nutmeg.
  4. Layer half of the eggplant in a greased baking dish, followed by half of the meat mixture and some béchamel. Repeat the layers.
  5. Preheat oven to 350°F (175°C) and cover with foil. Bake for 40 minutes, removing foil for the last 10 minutes to achieve golden brown crust.
