  • 8 oz flat rice noodles
  • 23 boneless chicken breasts (about 1 lb), diced
  • 3 cloves fresh garlic, minced
  • 2 large eggs
  • 2 tbsp tamarind paste
  • 3 tbsp low-sodium soy sauce
  • 1 cup bean sprouts
  • ¼ cup chopped cilantro
  • Lime wedges for serving
  • 2 tbsp cooking oil

Instructions

  1. Soak rice noodles in hot water for about 10 minutes until pliable; drain well.
  2. Heat oil in a large skillet over medium-high heat. Add chicken and sauté until golden brown (5-7 minutes).
  3. Stir in minced garlic and cook for one minute.
  4. Add soaked noodles and mix well.
  5. In a small bowl, combine tamarind paste and soy sauce; pour over noodle mixture and toss to coat.
  6. Push noodles to one side of the pan, crack the eggs on the other side, scramble lightly for about two minutes, then mix everything together.
  7. Toss in bean sprouts and cook for an additional minute. Serve with lime wedges.
