  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder
  • 3 large eggs (room temperature)
  • ½ cup unsalted butter (softened)
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round baking pan.
  2. Finely chop half the pistachios and set aside the rest for decoration.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy (3-5 minutes).
  4. Beat in eggs one at a time, adding in vanilla extract until well combined.
  5. In another bowl, whisk together flour, baking powder, and chopped pistachios. Gradually add these dry ingredients alternately with milk to the butter mixture until just combined.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
