  • 3 boneless, skinless chicken breasts (approximately 1.5 lb)
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp salt (plus more for seasoning)
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika (smoked if preferred)
  • 2 cups vegetable oil (for frying)

Instructions

  1. Cut the chicken breasts into bite-sized pieces.
  2. In a bowl, mix buttermilk, garlic powder, paprika, salt, and pepper. Add chicken pieces and marinate for at least 30 minutes.
  3. In another bowl, whisk together flour, cornstarch, additional salt, and pepper.
  4. Remove marinated chicken from buttermilk and coat each piece in the dry mixture, shaking off excess flour.
  5. Heat vegetable oil in a deep pan to about 350°F (175°C).
  6. Fry chicken in batches for 4-5 minutes until golden brown and crispy. Do not overcrowd the pan.
  7. Drain on paper towels and season with more salt if desired. Serve hot with your favorite dipping sauces.
