  • 1 cup pumpkin puree (fresh or canned)
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs, room temperature
  • 1 cup graham cracker crumbs
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves (optional)
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. For the crust, mix graham cracker crumbs and melted butter in a bowl until moistened. Press firmly into the bottom of the prepared pan.
  3. Bake the crust for about 10 minutes until lightly golden.
  4. In a separate bowl, beat softened cream cheese and sugars until smooth. Add eggs one at a time, mixing on low speed. Stir in pumpkin puree and spices.
  5. Pour the filling over the baked crust and smooth out with a spatula.
  6. Bake for an additional 25-30 minutes until set but slightly jiggly in the center.
  7. Allow to cool completely before slicing into squares.
