  • 1 tsp cinnamon

  • 2 large eggs (room temperature)
  • 1/3 cup vegetable oil
  • 1/2 cup milk (whole)
  • 1/4 cup sour cream or yogurt (optional)
  • 1/2 cup oats (quick)
  • 3 tbsp melted butter (for streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, granulated sugar, and brown sugar.
  3. In another bowl, mix canned pumpkin puree, eggs, vegetable oil, milk, and sour cream until smooth.
  4. Gradually fold the wet mixture into the dry ingredients until just combined; lumps are fine.
  5. For the streusel topping, mix oats with melted butter, cinnamon, and brown sugar until crumbly.
  6. Spoon batter into muffin cups about two-thirds full and top generously with streusel.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Cool slightly before enjoying.
