  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, combine pumpkin puree, granulated sugar, and brown sugar until smooth.
  4. Beat in eggs and vanilla into the pumpkin mixture until well combined.
  5. Gradually fold dry ingredients into the wet mixture until just incorporated.
  6. Scoop batter onto prepared baking sheets about two inches apart and bake for 12-15 minutes until edges are set.
  7. While cooling, prepare frosting by beating cream cheese and butter until creamy; gradually mix in powdered sugar.
  8. Once cookies are cool, spread or pipe frosting on half before topping with another cookie.
