  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In another bowl, beat softened butter and sugar until fluffy. Add eggs one at a time followed by pumpkin puree.
  4. Gradually mix dry ingredients into wet mixture until just combined.
  5. Scoop mounds of batter onto baking sheets about 2 inches apart and bake for 10–12 minutes until springy.
  6. To make the filling, beat cream cheese with powdered sugar and vanilla until smooth.
  7. Once cookies are cool, spread or pipe cream cheese filling on half of the cookies and top with the remaining halves.
