  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels and place them in a large bowl.
  3. Drizzle olive oil over the chicken, then add garlic powder, paprika, salt, pepper, and lemon juice. Toss until evenly coated.
  4. If using, add fresh herbs to the bowl and toss again or tuck them under the skin of the chicken.
  5. Arrange thighs skin-side up on a parchment-lined baking sheet.
  6. Roast for 35-40 minutes until the internal temperature reaches 165°F (75°C) and juices run clear.
