  • 1 pinch saffron threads
  • 1 cup long-grain basmati rice
  • 2 cups low-sodium vegetable or chicken broth
  • 2 tbsp olive oil

Instructions

  1. In a small bowl, steep the saffron threads in 2 tbsp of hot water.
  2. Heat olive oil in a medium pot over medium heat. Sauté the chopped onion until translucent (about 5 minutes).
  3. Add minced garlic and cook for an additional minute.
  4. Stir in the basmati rice, coating it with oil.
  5. Pour in the vegetable or chicken broth and the saffron infusion; bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes until all liquid is absorbed and rice is fluffy.
  7. Remove from heat and let sit covered for 5 minutes before fluffing with a fork.
