  • 2 tbsp extra virgin olive oil
  • 1 medium onion, finely chopped
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 can (28 oz) whole peeled tomatoes
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 4 large eggs
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onions until translucent.
  2. Add diced bell peppers and minced garlic; cook until softened.
  3. Pour in crushed tomatoes along with their juices. Stir in cumin and paprika; let simmer for about 10 minutes until thickened.
  4. Create wells in the sauce and crack an egg into each well. Cover and cook until the egg whites are set but yolks are still runny.
