Sour cream chicken enchiladas are your new go-to comfort food. With warm tortillas enveloping tender chicken, creamy sour cream, and zesty green enchilada sauce, every bite is a delightful experience.   • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup sour cream (full-fat recommended)
  • 1 can (10 oz) green enchilada sauce
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 8 tortillas (corn or flour)
  • 1 small onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • Juice of 1 lime

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and cook chicken until golden brown (6-8 minutes per side). Remove and shred.
  3. Sauté onions with cumin and chili powder until soft (about 5 minutes).
  4. In a bowl, mix shredded chicken, sour cream, half of the cheese, lime juice, and seasonings.
  5. Spread some enchilada sauce in a baking dish. Fill each tortilla with the mixture and roll tightly.
  6. Place in the dish seam-side down and top with remaining sauce and cheese.
  7. Cover with foil and bake for 20 minutes; uncover and bake for an additional 10 minutes until bubbly.
