  • 1 lb lean ground beef
  • 6 corn or flour tortillas
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 cups shredded sharp cheddar cheese
  • 1 cup salsa (mild or spicy)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until no longer pink. Add chopped onions and garlic powder; sauté until translucent.
  3. Stir in black beans, salsa, chili powder, cumin, and salt. Simmer for about 5 minutes until heated through.
  4. In a greased baking dish, layer tortillas at the bottom, half of the meat mixture, and half of the cheese. Repeat layers.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown.
  6. Allow to cool for 5 minutes before serving. Garnish with fresh cilantro or sliced jalapeños if desired.
