  • 1 medium yellow onion, chopped
  • 1 cup bell peppers, chopped (red or green)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup cornmeal
  • 2 tsp baking powder
  • 1 cup whole milk (or almond/soy milk)
  • 2 large eggs
  • 2 tbsp sugar
  • ½ tsp salt
  • ¼ cup melted butter

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a large skillet, sauté the chopped onions and bell peppers over medium heat until soft, about 5 minutes.
  3. Add the ground beef and cook until browned. Stir in the diced tomatoes, sweet corn, salt, pepper, cumin, and chili powder; simmer for about 10 minutes.
  4. In a mixing bowl, combine cornmeal, baking powder, milk, eggs, sugar, salt, and melted butter; mix until just combined.
  5. Spread the beef mixture evenly in the prepared baking dish and pour the cornbread batter over it gently.
  6. Bake for 25-30 minutes or until the cornbread topping is golden brown.
