  • 34 boneless, skinless chicken breasts
  • 1 cup bell peppers (mixed colors), chopped
  • 2 cups broccoli florets
  • 1 cup teriyaki sauce
  • 2 cups cooked rice (white or brown)
  • 2 tbsp sesame seeds
  • ¼ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • 1 tsp garlic powder
  • ½ tsp ginger powder

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper; place them in the baking dish.
  3. Add chopped bell peppers and broccoli florets around the chicken.
  4. In a bowl, mix teriyaki sauce, garlic powder, ginger powder, and brown sugar until combined. Pour the mixture over the chicken and veggies. Toss to coat evenly.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until chicken reaches an internal temperature of 165°F (75°C).
  6. Serve over cooked rice and sprinkle with sesame seeds.
