  • 4 salmon fillets (6 oz each)
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tsp Italian seasoning
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by washing the spinach and halving the cherry tomatoes. Mince the garlic.
  2. In a large skillet, heat olive oil over medium-high heat. Season the salmon fillets with salt and pepper, then sear skin-side down for 4-5 minutes until golden brown.
  3. Add minced garlic and cherry tomatoes to the skillet and sauté for about 3 minutes until fragrant and tomatoes begin to burst.
  4. Pour in heavy cream and Italian seasoning; stir gently and let simmer for 3-4 minutes until slightly thickened.
  5. Toss in baby spinach and squeeze fresh lemon juice over the dish. Stir until spinach wilts down (approximately 2 minutes).
  6. Serve warm, garnished with extra lemon slices if desired.
