  • 4 medium sweet potatoes (about 1.5 lbs)
  • 2 tbsp unsalted butter
  • 1/2 cup sour cream
  • 2 tbsp light brown sugar
  • 1/2 tsp ground cinnamon
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and prick with a fork.
  2. Bake sweet potatoes for 45-60 minutes until tender. Let cool slightly, then slice in half lengthwise and scoop out the flesh into a bowl.
  3. Mix scooped sweet potato with butter, sour cream, brown sugar, cinnamon, half the cheese, and green onions until smooth.
  4. Refill potato skins with the mixture, top with remaining cheese.
  5. Bake again for 15-20 minutes until golden brown.
